Dacelo Distilling

When the Kookaburra (genus Dacelo, pronounced Da-cel-o) laughs, it’s a sure sign they’re having fun!  Dacelo Distilling distils and bottles this fun in their extraordinary premium gin range, right here on the Sunshine Coast.

Founders, Sammy and Siobhan, created Dacelo Distilling, Coolum Beach’s first artisan craft distillery.  While it’s the kookaburra that sparked the initial inspiration, it was their love of Australian botanicals and a delicious gin on the deck at sunset that kept the fire glowing.

Dacelo has selected, unique, high quality native Australian botanicals such as Gumbi Gumbi, Banksia Robur, Muntrie berries, Wattle seed, Pandanus Nut, White Kunsea, Lemon Myrtle, and Strawberry Gum, all sourced from local sustainable and ethical growers. The distiller’s restraint on the juniper highlights the native botanicals, so gentle on the palate.  These gins are not traditional. Some might say they’re pushing boundaries. They encourage you to challenge your gin ideology, step outside your comfort zone, and let your palate party!

With a high focus on sustainability, Dacelo’s bottles are Australian made and contain at least 70% recycled glass collected through Container Deposit schemes.  Don’t fancy a tipple? No worries! Dacelo also creates delicious gin jams and relishes from the left-over fruits, macerated during the gin making process. They are the perfect addition to a charcuterie board or hamper filled with local Sunshine Coast produce!

At Dacelo Distilling, we take our gin seriously, but we don’t take ourselves too seriously. We believe laughter is the true key to unbridled happiness. And those kookaburra friends of ours? Well, it’s pretty obvious they are having fun! It really is one heck of a cackle, koo-koo-koo-koo-koo-kaa-kaa-kaa-koooaa!
